Getting a bit boring but this is another Half Baked Harvest recipe. It’s a must visit site if you like both classics and variations on classics. Comfort food writ large.
What made this dish is our ready access, in the Pacific Northwest, to mushrooms of all types…you can even forage for them if you know what to look for. If you don’t like mushrooms then I’d pass on this fungus based soup.
Our wine…a bit over the top but had to give the newly released 2018 Quilceda Creek CVR Red…a “left bank” leaning blend from the highly acclaimed Washington State winery, a swirl. Excellent with nice tannins even at this young age.
