Has been on my list for several years: Joule.
It’s been described as Pacific Northwest Korean and has been around since 2007…not sure why it took me so long to visit but I finally got the chance. My only disappointment is that I waited so long! Why add PNW to the description? Comes from the chefs use of local ingredients like geoduck, mackerel and other local meats.
The food is excellent and quite unique with blending of a strong Korean influence from Chefs Rachel Yang and Seif Chirchi with locally available produce and meats. Examples include “that” short rib steak kalbi with grilled kimchi and Chinese pancake with smoked salmon roe.
Wine list features some female winemakers including my good friend Mari Womack of Damsel Cellars. Choices are exclusively from the PNW and include Orange and Ice wines.
Service was excellent.
