For biscuit fans: Seattle Biscuit Company.
First met these guys when all they had was a truck. Now they have a brick and mortar place in Fremont (Frelard area). They are legit…one is from Mississippi and the other, Georgia and although they believe you don’t have to be from the South to make good biscuits, I humbly disagree. They are spot on with their biscuits…crispy on the outside and soft and flaky on the inside…perfect!
The menu runs the gamut from breakfast to lunch to dinner with one constant…biscuits. How about a mimosa with shrimp and grits? The grits were unique…from blue corn instead of the more typical white or yellow. I have to say that this dish was very good and on par with much more expensive examples I have had in the South. Even though the dish isn’t usually served with a biscuit, it was the perfect add to make sure I got all of it off my plate! Nothing left but the tails.
The space is small, about 30 seats, but the bar seating and tables turnover fairly quickly so the wait is short. Service is very good and friendly.
So, if you live in the area or are looking for a great biscuit in Seattle, give them a try. You won’t be disappointed. And you can combine your trip with a visit to the Fremont Troll.
